Bamboo Shoot Pulav (North Indian Cuisine)

Ingredients: 

  • Coconut  - ½ copra
  • Green chilli – 4-5
  • Bamboo shoot – 200 gm
  • Basmati rice- 250 gm
  • Carrot – 150 gm
  • Ginger – 2 teaspoon
  • Garlic – 2 teaspoon
  • Peas- 25 gm
  • Beans – 150 gm
  • Cinnamon – 10 gm
  • Coriander leaves - 10-15
  • Onion – 1
  • Bay leaf - 1
  • Tomato - 1
  • Cloves - 3-4
  • Salt - to taste

Preparation:

  1.  Take oil in a pan and add finely chopped Onions till golden brown. Grind coriander, garlic-ginger paste, cinnamon - cloves paste and grated coconut to get a paste.
  2. Add ground masala, bay leaf, cut vegetables and bamboo shoot and fry. Add rice, fry for a little time & then add 650 ml water
  3. Add salt and cook till done.
