Bamboo Shoot Soup (South Indian Cuisine)

Ingredients: 

  • Bamboo Shoot - 150 gm
  • Carrot –150 gm
  • Capsicum - 150 gm
  • Beans – 150 gm
  • Onion – 100 gm
  • Peas- 50 gm
  • Coconut - ½ copra
  • Chillies - 2-3
  • Coriander - ½ bunch
  • Salt- to taste· Pepper- to taste

Preparation:

  1. Chop all the vegetables to small sizes. Chop the onions and sauté in the oil.
  2. Add the chopped vegetables into the same and continue sautéing until all are cooked. Add the paste of coconut, chilies and coriander into it and cook till done.
  3. Add water and bring it to boil. Add salt and pepper at the end.
