Testing of shoot properties (nutraceutical, organoleptic, chemical) of edible bamboo shoots Midlands
Midlands laboratories, Delhi was assigned with the task of evaluating the nutritional composition of bamboo shoots. Various species of shoots were tested for their edible portion, the proximate compositions and nutrients like Iron, Calcium and Niacin were also evaluated. The bittering substance in shoots, Hydrocyanic acid was also anlysed in the product.
Bamboo shoots were commercially sterlised using the process of canning. The canned product was found suitable with no bitter taste, as was in the raw shoot.
