Bamboo Shoot Sweet Soup (South Indian Cuisine)

Ingredients: 

  • Bamboo Shoot – 100 gm
  • Coconut to make coconut milk - ½ copra
  • Onions – 3
  • Garlic – 3 cloves
  • Chilli Powder – 1 teaspoon
  • Ginger - ½ inch piece
  • Turmeric – 1 teaspoon
  • Mustard Seeds – 1 teaspoon
  • Salt – to taste

Preparation: 

  1. Chop the Bamboo Shoot into small cubes and then soak in water for 2 days. Then pass the Shoot through a sieve.
  2. Grind the spices. Boil the coconut milk, add the spices and stir well.
  3. Add the chopped bamboo shoot and bring to a boil while stirring. Serve immediately.
