BAMBOO SHOOTS AS A PRODUCT

In many parts of India, bamboo shoots have formed a part of traditional cuisine – fresh, dried, shredded or pickled. There is however also a growing market for processed and packaged shoots, representing an opportunity for the establishment of commercially run processing units. Bamboo shoots are good in fibre and have optimum amount of other nutrients. They are said to be anti-cancerous and antimicrobial in nature. The assumptions are being scientifically tested at Tamil Nadu Agricultural university (TNAU) with the Mission's support. The composition testing of shoots, shelf life analysis , market study and standardization of processing methods has been carried out by the Mission.


Under the processing options, the following three packages are being supported by the Mission:

  1. Cluster level shoot processing: The Mission has developed technology packages for bamboo shoot processing at the industrial scale, and for community/ village level enterprise. Using low cost equipment and simple processes, options for shelf life ranging from 9 days (in water) and 23 days (in brine) can be exercised to add value and provide additional income. Such tiny scale enterprise can also function as part of a supply chain from larger scale processing units. The community level technology package has been demonstrated by the NMBA at 24 locations, and has received an overwhelming response.

    The product clean packed in nylon based packaging material, has a shelf life of 14-16 days.

    The package has been demonstrated at more than 20 locations by the Mission.
  2. Vacuum processing of shoots : This technology is to increase the shelf life of product to five-six months . the product is suitable to be sold in the state/district out of season and for marketing outside through the year. The product can also be used for processing secondry products like pickles , canned products etc. The product has attributed like economics in production, transparency and hence enhanced looks, space economy.
  3. Canning: the traditional method of commercial sterilization is the form in which most of the shoots are transported after processing. This is the form in which shoots are imported. The target group is local people who want convenient and clean foods.


Market:
At present, over two million tons of edible bamboo shoots are consumed around the world every year, mostly in Asia. China alone exports over US$ 20 million annually. The world trade in bamboo shoots for 2002 stood at 3400 crores in 2002 which in volume terms is 3,00,000 tons.

The shoot processing unites that produce shoots are:

  • Natural Hill Food products, Aizawl , Mizoram- Vacuum processing
  • Luit Valley Food Processing, Jorhat- Vacuum processing and Canning
  • Nagaland Foods, Dimapur - Canning and pickling

Nagaland Foods, Dimapur - Canning and pickling

Assam and Nagaland are additionally processing cluster level shoots during the season.
